Egg pancake is a traditional Wuxi snack made mainly from flour and eggs, often served with spring onions, lard-sugar paste, and other ingredients.
How to prepare it?
The preparation starts with wrapping lard mixed with sugar and chopped spring onions in fermented dough. The dough is then hand-pressed into flat, round shapes. The pancakes are shallow-fried, and beaten eggs are poured over the surface to create a sun-like, golden pattern. Lastly, they are pan-fried on both sides until crispy and golden brown.
How does it taste?
The finished pancake provides a delightful mix of textures: a crispy outer layer housing a savory-sweet filling of lard and onions, resulting in a rich yet not greasy flavor. Due to its unique taste and attractive look, it has been ranked among the top 10 snacks in Wuxi.
