The Taihu Lake white shrimp is known as one of the "Three Whites" in the Taihu Lake area.

With a thin shell and tiny feet, white shrimp is one of the "three treasures" in Taihu Lake. It is smaller than that of river or cocktail shrimp, and its body is like silver. The shrimp features a taste of fatness and tenderness.

White shrimp soaked in wine is quite fresh and delicious. It could supply people's body with vital essence and nutrition.

Taihu dishes have rapidly developed in recent years.

In 1994, fishermen living in the east coast of Taihu Lake, Guangfu town of Suzhou, tried characteristic Taihu dishes. Later on, Dongshan locals in Suzhou and Xishan fishermen along Taihu Lake also started businesses by offering Taihu dishes. Now some urban restaurants have also introduced Taihu dishes to their menus, attracting many customers.

Guangfu town is regarded as "a landscape of lakes and mountains and fairy grottoes". The hundred-mile winding shoreline is China's largest freshwater fishing port.

Taihu Lake has more than 100 varieties of wild fishes, among which the white shrimp, white fish and whitebait, are the most popular. Many Wuxi tourists love the brined white shrimp dish.
